    Directions

    Step1

In a large bowl, combine soy sauce, calamansi juice, banana ketchup, brown sugar, minced garlic, black pepper, salt, oyster sauce, and vegetable oil. Mix well until the sugar is dissolved and the ingredients are thoroughly combined.

    Step2

Add the pork cubes to the marinade, ensuring that each piece is well-coated. Cover the bowl and let the pork marinate for at least 4 hours, preferably overnight, in the refrigerator to absorb all the flavors.

    Step3

After marinating, thread the pork cubes onto the soaked bamboo skewers, about 4-5 pieces per skewer. Preheat your grill to medium-high heat. Grill the skewers for 4-5 minutes on each side, basting occasionally with the leftover marinade. Cook until the pork is fully cooked and slightly charred on the edges. Ensure the pork reaches an internal temperature of 145°F (63°C) for safety.

    Step4

Serve the Pork Skewers hot, with a side of vinegar dipping sauce (vinegar with garlic, chili, and a bit of sugar) or your favorite dipping sauce.
